Bega cheese, salad, ham and basil pesto sandwich 

Egg Free

Makes 1 sandwich

Ingredients

2 slices of multigrain bread
1 tsp fresh basil pesto
1 slice of Bega Natural Cheese Slices
2 slices of lean ham
1/4 cup carrot
3 slices tomato
3 slices cucumber
handful of baby spinach leaves

Method

  1. Top one slice of bread with a tablespoon of basil pesto. Add the Bega cheese, slices of ham, carrot, tomato, cucumber and spinach leaves. Top with the second slice of bread and cut into triangles.

Bega cheese, leftover roasted pumpkin and baby spinach sandwich

Egg Free, Vegetarian

Makes 1 sandwich

Ingredients

2 slices of multigrain bread
1 slice of Bega Natural Cheese Slices
1-2 tbsp mashed leftover roast pumpkin
3-4 baby spinach leaves

Method

  1. Place the cheese on a slice of bread then layer on the mashed pumpkin and baby spinach leaves. Top with the remaining slice of bread then cut and serve.

Bega cheese, shredded chicken, hummus and salad sandwich

Egg Free

Makes 1 sandwich

Ingredients

2 slices of multigrain bread
2 tsp hummus
1 slice of Bega Natural Cheese Slices
1 slice of shredded cooked chicken
1 tbsp grated carrot
4 thin slices of cucumber
2 tbsp chopped iceberg lettuce

Method

  1. Spread the hummus over 1 slice of bread then layer the cheese, chicken, carrot, cucumber and lettuce. Top with the remaining slice of bread, cut in half and serve.

Bega cheese, tuna and avocado roll up sandwiches

Egg Free

Makes 2 serves

Ingredients

4 slices of high top bread
95g tin tuna in springwater, drained
1/2 avocado
1/4 cup grated Bega cheese

Method

  1. To prepare the bread, cut off the crusts and place the slices on a chopping board. Flatten using a rolling pin.
  2. Combine the tuna, avocado and cheese and mash to form a spread.
  3. Leaving a 1cm gap from the edge, place 1/2 of the mash mixture in a line along the bread (parallel to the short edge). Continue with the remaining slices of bread.
  4. Gently roll the bread ‘sushi style’.
  5. Cut each roll into 2-3 rounds. Serve.

Melted Bega cheese, scrambled egg and lettuce sandwich fingers

Vegetarian

Makes 3 sandwich fingers

Ingredients

1 egg, whisked
1 tbsp milk, or water
1 slice of Bega Easy Melt Colby Cheese Slices
1 tsp butter
2 slices of multigrain bread, crusts removed
1 tsp chopped chives, optional to garnish
1/4 cup finely chopped cos lettuce

Method

  1. Whisk together the egg and milk and set aside.
  2. Heat a small frying pan over medium heat.
  3. Pour in the egg mixture. Gently and continuously stir as they cook. Tear up the cheese slice, sprinkle over the egg mixture and allow to melt through the egg as you stir. Once cooked, set aside.
  4. Place the cooked egg over 1 slice of bread, sprinkle with chives if using and then top with the lettuce. Top with the remaining slice of bread, cut into small three fingers.
