Quick and easy pikelets for kids

My kids come home from school hungry. Actually they come home hangry – as if the choc-a-block full bento boxes aren’t enough to get them through. These pikelets are what I give to them for afternoon tea when we need a quick, simple and filling snack. They are super simple and completely foolproof. To make these pikelets perfectly I use a crepe pan which has a thinner base to cook them evenly. An affordable crepe pan is the Benzer or for the very posh version you will love the Le Creuset – a specific crepe pan will really change your pikelet, pancake or crepe game. Another trick I have is that I use butter AND olive oil to grease the pan, this tends to stop the butter from burning. Finally, I cook on a medium to low heat, particularly if you are going with the banana (egg free) version.

I hope you enjoy these pikelets as much as we do in this house!

Such an easy recipe, I added some chocolate chips as well as a change. Just wondering how long they last for? Can you fridgerate for a few days?

Delicious. I substituted half the flour for quick oats and added some shredded apple and they were a hit with my 14 month old twins!
