Quick and easy pikelets for kids
My kids come home from school hungry. Actually they come home hangry – as if the choc-a-block full bento boxes aren’t enough to get them through. These pikelets are what I give to them for afternoon tea when we need a quick, simple and filling snack. They are super simple and completely foolproof. To make these pikelets perfectly I use a crepe pan which has a thinner base to cook them evenly. An affordable crepe pan is the Benzer or for the very posh version you will love the Le Creuset – a specific crepe pan will really change your pikelet, pancake or crepe game. Another trick I have is that I use butter AND olive oil to grease the pan, this tends to stop the butter from burning. Finally, I cook on a medium to low heat, particularly if you are going with the banana (egg free) version.

- 1 cup self raising flour
- 3/4 cup your preferred milk
- 1 tablespoon maple syrup
- 1 egg or 1 mashed banana
- Butter and olive oil to grease
Place all ingredients in a bowl and whisk to combine. -
Heat 1 teaspoon of olive oil and a smear of butter in a non-stick frying pan over medium-low. Dollop tablespoon sized amounts of batter in the pan. Cook until bubbles appear on the surface then flip and cook until golden brown. Continue with the remaining batter. -
Serve the pikelets with a fruit salad and maple syrup as desired. -
