Creamy Tuna Egg & Veggie Salad

This creamy tuna, egg and veggie salad is a very simple and nutritious way to enjoy vegetables. You can omit the tuna for some ham or other lean meat. Harry loves a raw salad on his tasting plate because he enjoys the ‘crunching’ noise and we play on that to keep things fun. You can use age appropriate vegetables and pick ‘n’ mix to include your family favourites.

Ingredients

  • 1 cup green beans
  • 1 carrot, finely sliced into matchsticks
  • 1 x 400g tin chickpeas, drained and rinsed
  • 2 hard-boiled eggs, chopped
  • 1 tin tuna OR 2 slices of good quality ham, chopped
  • 1/4 cup red cabbage, chopped
  • 1 Tbsp mayonaise
  • 1 tsp lemon juice

Method

Step 1

(Optional) Bring a small saucepan of water to the boil. Cook the beans and carrot for a few minutes or until tender. Set aside to cool. -

Step 2

In a large bowl, combine the beans, carrot, chickpeas, egg, tuna and cabbage. -

Step 3

Add the mayonnaise and lemon juice and stir thoroughly until combined. Serve. -

    Hi there, thanks for this recipe. I made it tonight with some changes based on what I had on hand: can 4 bean mix, chopped cucumber and tomato, and some dill to the dressing. Served with a boiled egg and crumbed fish and it was a great family meal!

    Hello, I’ve made this twice now, once for my 13 month old son and I and once for a big family gathering. I love it, it’s so filling, my son loves the texture of it and every single person who tried it at the party had something fantastic to say about it! It will definitely be a staple in this house now.     Hello,
    I just wanted to make sure…the egg stays raw? How is it that raw egg is unsafe for pregnant ladies yet is ok for a little baby? (I believe you, I’m just a bit confused! 😉

      The eggs are ‘hard boiled’ so completely cooked through. You just need to boil them first and allow to cool. Thanks, Allie x
