Owwww. These are gooood. It’s like eating those delicious crispy bits left on the pan, you know you love it. Don’t use too much oil as you want to keep them healthy – use a great non stick pan and keep the heat on medium so they don’t burn. I ate almost all of the first batch so had to make more.

The littlies will love ’em.

Ingredients

  • 1 Egg
  • 2 tbs flour
  • 2 tbs olive oil
  • (Veggie suggestions)
  • Carrot
  • Onion
  • Potato
  • Zucchini
  • Corn
  • Sweet potato
  • Squash
  • Parsnip
  • (Aim for around 2 cups of grated vegetables.)

Method

Step 1

Mix the grated veggies, flour and egg in a bowl -

Step 2

Heat the oil on a non-stick frypan and place dollops of the mixture on the hot pan -

Step 3

Cook for a few minutes each side until crispy and drain on a paper towel -

    I just made up a batch and will be testing them at lunch today. It was quick and simple. Ellie loves finger food but doesn’t have enough teeth to really chew, so after lightly frying them, I baked them in a 350F oven for about 15 minutes to soften up the veg a bit more. I used sweet potato, carrot, onion, a small yellow potato and seasoned it with basil, a little garlic powder and some nutmeg. I think they’re fantastic and I hope Ellie does too!

    Hi there what could you substitute for the egg? My daughter is allergic to egg and dairy. Thanks!

      Hi Claire, A few ideas to replace the egg (I haven’t tried these myself but a few people on our Facebook page mentioned they use them)… firstly, you might not need it if you choose the ‘juicier’ veggies such as zucchini, onion, carrot as the moisture mixed with the flour might be enough to bind them. Other ideas we have heard work well – mixing 1 tablespoon ground flax seed OR chia seeds mixed with 3 tablespoons hot water and left to soak for a few minutes can give you a sticky consistency similar to 1 egg.
