Simple vegetable curry for kids

With flavours light enough for the kids to enjoy too and versatile for you to use whatever ingredients you have on hand this is sure to be a new favourite.

Nutrition Note: Mild curry flavours are suitable for most young children and when introduced early can help broaden the variety of flavours that they will accept.

Ingredients

  • 2 tbsp olive oil
  • 600g potatoes, peeled, diced
  • 1 brown onion, sliced
  • 1 clove garlic, crushed
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 x 400g tin diced tomatoes
  • ½ cup vegetable stock
  • ½ cup coconut milk
  • 1 cup frozen peas
  • ½ cup chopped broccoli florets
  • ½ cup chopped cauliflower florets
  • 1 tbsp coriander, chopped
  • Greek yoghurt, crusty bread or cooked rice to serve

Method

Step 1

Heat 1 tbsp oil in a large frying pan over medium heat. Add the potatoes and cook for 15 minutes or until tender. Remove from the pan. -

Step 2

Add the remaining oil, onion and garlic and cook for 2-3 minutes or until soft. Add the ground coriander, cumin and cook for a further 1 minute or until fragrant. -

Step 3

Add the tomato, coconut milk, stock, potato, peas, broccoli and cauliflower. Simmer for 5 – 10 minutes or until the vegetables are tender and the sauce has thickened. -

Step 4

To serve, top the curry with a dollop of yoghurt and chopped coriander. Serve with crusty bread or steamed rice. -

    I made this yesterday in the slow cooker. I just threw everything in and cooked on high for 4-5 hours. It was delicious! I added a teaspoon of red curry paste for a bit more kick.

    I’ve never had any success getting my two kids to eat curry, mild or otherwise…. Until tonight! This was awesome, easy to spice up for the adults, and the kids scoffed it: I believe my 4 year olds words were “This is the most delicious dinner I’ve ever eaten !” Now that’s some praise!
    Stoked to have found a great kid friendly veggie curry – even the vegans in our extended family are going to love this!
