Lunchbox Pinwheel Wraps

The new school year is almost upon us. My little boy, Harry is about to start pre-school and I am thinking up all the new and interesting things I can put in his lunchbox. I asked him what he would most like for his first day and he said; “Pin-wheelies”. So here they are, a fun and new way to serve sandwiches are a creative and simple way to inspire kids to eat their nutritious lunches.

Ingredients

  • 2 multigrain wraps or mountain bread 
 


  • 1/2 avocado
  • 
1 small carrot, grated
  • 1 stick celery, finely chopped
  • 4 slices cooked chicken or turkey, finely chopped
  • 1 tablespoon whole-egg mayonnaise
  • handful of fresh baby spinach or chopped lettuce

Method

Step 1

Place wraps on a board -

Step 2

In a small bowl combine the avocado, carrot, celery, chicken and mayonnaise. Mash together until well combined -

Step 3

Spread half the avocado mixture over one wrap and sprinkle with the spinach. Roll up the wrap tightly to enclose filling. Continue with the second wrap -

Step 4

Cut into small bite sized slices -
