Holiday Chicken Puree

We enjoyed a beautifully relaxing beach holiday recently with amazing sunny days and crystal clear water. George loved it! He also loved all food I “threw” together while we were away. It’s funny how everything seems to taste better while on holidays. I suddenly wish the bowl of muesli with fruit and yoghurt was bottomless and the salad rolls after coming home from a long morning at the beach I hope never end. George seemed to be the same with this throw-together meal of chicken, apple, sweet potato, carrot and corn I made for him on one of our last days away. I’d love to know if tastes just as good back home.

Ingredients
- 100 g chicken, chopped
- 1/2 small sweet potato, peeled and chopped
- 1 small carrot, peeled and chopped
- 1 apple, peeled and finely sliced
- 1/2 corn cob, kernels trimmed (or 1/2 cup frozen corn kernels or 1 small tin of corn kernels, drained and rinsed)
- 2 tbsp chickpeas rinsed and drained
- 3/4 cup of water
Method
Step 1
Place a steamer basket over a pot of boiling water. -
Step 2
Add the chicken and layer the sweet potato, carrot, apple and corn on top. -
Step 3
Cover and steam for approximately 10 minutes or until the chicken is cooked through and the vegetables are tender. -
Step 4
Combine chicken, vegetables and chickpeas and puree, adding water as needed until you have the desired consistency. -
