Coconut and Date Cookies

These new coconut and date cookies are the result of a recent pantry clear out. Harry and his little playdate were very impressed. The cookies freeze well so are perfect for lunch boxes or taking out and about.

They are egg free and you could use your preferred milk for allergies or intolerance’s and the dates make these cookies pretty sweet so the sugar is optional for the older kids.

Harry’s new favourite word is “coooookie”.

Nutrition Note: Rolled oats are a great addition to baked goods.  They add texture, fibre and protein and are low in salt, plus they have a low glycaemic index (GI) providing a sustained energy for busy little bodies.

        Yes you should be fine to make these without the banana. You could always try half a grated apple or some extra dried fruit for moisture. Enjoy, Ax

      I just made these, my 22 month old loved them! And after complaining there was no chocolate chips in them my husband devoured 6!! Then admitted they didn’t need choc chips and were delicious.

      These are delicious! I didn’t have any dates so swapped them for half a cup of sultanas and half a cup of seed mix (chia, linseed, sunflower and pepitas) and they turned out a treat. Thanks!

      Yum! I started making these with my (nearly) 2 yr old, but realised I didn’t have banana, so through in some peanut butter and a couple tsp of the Mayver’s Hazelnut and Cacao spread for healthy chocolatey goodness. Delicious!

      These are delicious. My toddler loves them and is more than happy to eat them frozen (same with your carrot fruit biscuits and chewy fruit biscuits). In fact he often fishes them out of the freezer and brings the bag to me to open. I added a squirt of honey, instead of the sugar option, but the dates make them very sweet so I won’t add it next time.

      These were made with the intention of freezing most of them as quick and easy toddler snacks for my 13mth old instead of resorting to store bought muesli bars and high sodium crackers, well they didn’t quite make it to the freezer after the kids and hubby stole a few each for their lunchboxes! Needless to say we will be making more. So easy to whip up and so insanely delicious. I may have undercooked them but the texture was a gorgeously soft macaroon like cookie. We all loved them! PS- they taste amazing crumbled over frozen berries for desert too!

      Good & easy recipe. Substituted dried apricots for the dates – delicious. Doesn’t need the sugar, the dried fruit makes them sweet enough. Thanks.

      Delicious! My 7 month old loves them, as do I. I used olive oil instead. No extra sugar/golden syrup needed as the dates are already super sweet. Thanks for a great recipe.
