Broccomole

If guacamole (or any dip) is a hit with your kids, or even simply avocado on sandwich, then this lovely broccomole dip is a great and familiar way to enjoy the goodness of broccoli.

Nutrition Note: if you are having trouble getting your little ones to eat enough fibre, this is a great way to increase their daily intake.

Ingredients

  • 1 medium head broccoli, cut into small florets
  • 2 avocadoes, cubed
  • juice of 1/2 lime
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 cup coriander leaves, finely chopped
  • 2 spring onions, finely chopped
  • pepper to taste

Method

Step 1

Place the broccoli in a steamer basket over boiling water and steam for 5 minutes.

Step 2

Place the cubes from 1 avocado into a food processor with the broccoli florets and pulse until smooth. -

Step 3

In a separate bowl, mash the remaining avocado with a potato masher or fork. -

Step 4

Stir through the broccoli mixture, coriander, spring onions and spices. -

Step 5

Add the lime juice, mix to combine and serve. -

Step 6

Storage: keep the broccomole in the fridge for 2-3 days. To help prevent the dip from browning, store with the seed of the avocado and add another squeeze of lemon or lime juice. Store in a ceramic bowl covered with foil. -
