Salmon Potato Patties

We have arrived in Singapore, and I am slowly building my baby food stash in the freezer. I have been making all of Harry’s favourites and am starting to branch out and explore a little more. I don’t have an oven, I have a microwave oven though, very interesting.

These were delicious, I sprinkled some salt on them for me, and Harry just had them as is.

Tip: Try extras such as peas, grated zucchini or carrot – they would all work well

Ingredients

  • 1 x 160g tin red salmon, skinless/boneless (or use fresh cooked salmon)
  • 1 large potato, peeled, grated (squeeze out excess juice)
  • ½ brown onion, grated or finely chopped (squeeze out excess juice)
  • 1 egg
  • 2 tbs plain wholemeal flour
  • 3 tbs olive oil, to fry

Method

Step 1

Heat oil in a frypan. Gently fry onion and potato (optional). -

Step 2

Combine all ingredients in a bowl, mix well. -

Step 3

Roll into small patties. -

Step 4

Gently fry in batches. Once cooked through I covered with the frypan lid and reduced to a very low heat or 5 minutes, this help cook the patties right through without burning the outside too much. -

    I think the potato I used was too big, the patties wouldn’t stay together. And I probably overcompensated with flour… would it be possible to find out how many cups worth (or potato weight)? Thanks!
