Green Chicken and Rice

I think I have the snottiest baby on the planet right now. And just in time for our long flight home. Poor little man is not well, so this is full of the good stuff.And the colour matches his nose perfectly.

Ingredients

  • 2 tbs olive oil
  • ½ small onion, finely sliced
  • 1 large zucchini, diced
  • 1 pear, peeled cored and diced
  • 1 cup broccoli florets
  • 1 large potato, peeled and diced
  • 250g chicken breast, diced
  • 1 cup vegetable stock
  • 1 cup cooked brown rice (or Quinoa)

Method

Step 1

Heat olive oil in a saucepan over medium. Add the onions and sauté for a minute until soft. Lower the heat slightly, add the potato and pear and cover for 3 minutes (continue stirring, as you don't want it to burn) -

Step 2

Add the chicken and stir for a few minutes until almost cooked through -

Step 3

Add the zucchini and brocolli, stir to combine and then add the stock. Bring to the boil, reduce heat and partially cover. Leave to simmer for around 10 minutes or until vegetables are tender -

Step 4

Puree mixture until you have desired texture. Add the cooked rice and stir through -

    Great recipe – the only way I’ve been able to get my 10 month old to eat chicken and broccoli.

    made this today with quinoa. Big success (though to be honest, my 9mo hasn’t refused any food yet). The recipe makes heaps, so my bub has plenty of nutritious chicken dinners ahead of her. I’ve been looking for something without any carrot or sweet potato in it – bub has food with carrot in it at least twice a day and I’m not sure if I’m imagining it, but she is starting to look a little orange!
