Breakfast can often be the meal that feels the most monotonous. Sometimes it’s nice to mix things up by surprising the kids with a batch of fresh pancakes. These blueberry ricotta pancakes are light, fluffy and delicious and you can substitute the blueberries for any seasonal fruit you like. A 1 meal 3 ways recipe that is made suitable for a baby, toddler and of course the adults too.
There’s no secret to cooking family food. You simply choose a meal you love, and during the cooking process remove elements suitable for your baby and gently mash. For your toddler, prepare the meal or deconstruct part of the meal into easy-to-manage finger foods.

- 2 eggs
- 1 tsp fresh lemon juice
- ¾ tsp baking powder
- ½ cup wholemeal flour
- ½ cup blueberries
- ½ banana + ¼ extra banana for baby
- ½ cup ricotta + 2 tbsp for baby
- ½ cup milk + 1 tbsp breast milk or formula for baby
- ½ tsp vanilla extract
- 1 tsp butter, to fry
- Extra fruit: Strawberries, passion fruit, mango, and kiwi fruit.
Method
Step 1
In a medium bowl, whisk together eggs, ricotta, lemon juice, milk, vanilla and baking powder. Next, whisk in flour until batter combines. Add blueberries and banana, and gently mix to combine. -
Step 2
Heat a teaspoon of butter in a fry pan over medium heat. Dollop tablespoon amounts of batter and cook until small bubbles appear on the surface, then flip and cook until golden. -
Step 3
Serve pancakes with maple syrup and chopped seasonal fruit and use the ingredients to adapt the family meal for different developmental stages. -
Step 4
Baby: Combine two tablespoons ricotta, ¼ banana and 1-tablespoon breast milk or prepared formula. Stir until smooth. -
Step 5
Toddler: Serve mini or chopped pancakes as finger food, or topped with fresh fruit and a teaspoon of pure maple syrup.

I made these today but they were very flat and rubbery. Are they meant to be fluffy? Also are they freezable?

I don’t have ricotta but would love to make these for tomorrows breakfast. Do you think I could use cream cheese instead?
