There is ALWAYS a carton of eggs in my fridge – they are nutritious and economical inclusion in a healthy balanced diet.  Eggs provide at least 11 essential vitamins and minerals including many B vitamins, folate, selenium and iron.  They are also high in protein and a source of long chain omega 3 fatty acids important for brain function and development.

Mini Zucchini, leek & ricotta frittatas
Pick ‘n’ mix egg & vegetable fried rice
Cheesy vegetable rice slice
Beetroot & ricotta baked frittata
Yoghurt & broccoli quiche

Savoury pancakes
Blueberry ricotta pancakes
Simple baked meatballs
Lamb, quinoa rissoles
Creamy tuna egg salad
Chicken, halloumi quinoa balls
Spinach 3 cheese slice
