Pick ‘n’ Mix Savoury Pancakes

The other day we made some pancakes for breakfast and there were leftovers. This doesn’t happen very often, but when it does I make these little savoury pancakes for lunch. You can top them with any of your kids favourite flavours, and they make a really good alternative to the sandwich in lunch boxes.
You can pick ‘n’ mix your own flavours and change the size of the pancakes to keep this fun and interesting. What do you have on yours?

Ingredients
- 1 cup wholemeal self raising flour
- 1 egg
- 3/4 cup milk
- (Topping Ideas)
- Cream cheese, cucumber and chives
- Guacamole with tuna
- Avocado with ham and tomato
- Ham and melted cheese
Method
Step 1
To make the pancakes, sift the flour into a bowl. Beat in the egg and milk until the batter is smooth. Heat a fry pan over medium, melt a small amount of butter. Pour in 1/4 cup of batter (or whatever size pancake you want). When large bubbles form on the surface, flip over and cook until golden on the other side. Continue with the the remaining batter.

You can top your pancakes with whatever yummy ingredients your kids love. Or try serving the toppings separately and letting the kids pick 'n' mix their own. -

Hey there!
Success with these pick n mix. Instead of making the plain batter I made a batter similar to that of the muffins incorporating creamed corn, steamed broccoli and pumpkin, a whole grated zucchini, and a grated red apple.
Took a bit to get the batter the right consistency, but add extra milk a little at a time until it’s right.
Spread with cream cheese after it has cooled down. My 10 month old loves them. Thanks 🙂
