Zucchini ‘Spaghetti’
Most kids we know love twisting and turning their spaghetti onto their fork so it’s likely they’ll love to twist and turn their zucchini spaghetti too. For kids who are fussy with all things green try mixing in your zucchini spaghetti with some regular spaghetti to encourage their enjoyment and acceptance.
Nutrition note: A fun and simple way to increase your kid’s veggie intake, whether they know they’re eating zucchini ‘spaghetti’ bolognese or not.

Ingredients
- 2 zucchini
Method
Step 1
Using a mandolin on the 1/8" julienne setting, slice the zucchini on all four sides until you reach the seeds in the middle. If you don't have a mandolin simply use a speed peeler to finely slice the zucchini and cut each length into thin spaghetti sized strips. -
Step 2
Bring a medium sized saucepan of water to the boil over high heat. -
Step 3
Add the zucchini spaghetti to the boiling water and cook for 2 minutes. -
Step 4
Drain and serve with your favourite sauce. -
