Valentine’s Day is tomorrow. We think nothing says ‘I Love You’ more than breakfast in bed (with the kids). Why not make these deliciously fluffy pancakes, served on a tray, with a hand picked bunch of flowers, and enjoy a special moment together.

Tip: If you are short of time you don’t have to whisk the egg white separately, just add the whole egg with the butter and honey. Whisking the egg white just adds to the light and fluffiness of these pancakes.Join us on Facebook for other foodie bits and pieces.
- 1 ¼ cups milk
- 1 ½ - 2 tsp fresh lemon juice
- 1 ½ cups self raising flour
- ¼ tsp bicarbonate soda
- 1 egg, separated
- 1 tbsp of melted butter (or oil)
- 1 tbsp honey
Stir together milk and lemon juice in a medium bowl. Set aside. -
Sift together self raising flour and bicarbonate soda in a large bowl -
In a small bowl, mix together the egg yolk, melted butter (or oil) and honey. -
Whisk the egg, butter and honey mixture into the milk and lemon.
Whisk egg white to soft peaks. -
Slowly pour the wet ingredients into the dry and stir until just combined. Do not over mix. This will result in tough pancakes!
Fold through the egg whites, being careful not to knock out all the air. -
Heat a non-stick frying pan to a medium heat. Grease with a small amount of butter or oil. Once heated begin cooking pancakes! -
Serve with maple syrup, honey, lemon and sugar or fruit – Take your pick! -
