Honey Soy Chicken

I went hunting through my mum’s old recipe book yesterday and found this gem. Modified slightly as I don’t think it needs the sugar or tomato sauce. These are very tasty, and perfect for toddlers to munch on. I would peel the meat off the bone for them and check there are no hard bits of cartilage they could choke on.

Once I made these I used them three ways:

– Fresh out of the oven for Harry’s dinner last night

– A chicken and bean pasta for his lunch today

– Melted cheese and chicken sandwich fingers for a snack tomorrow

Ingredients

  • ¼ cup soy sauce
  • 2 tbs honey
  • 2 tbs lemon juice
  • ½ garlic clove, crushed
  • 3 organic chicken drumsticks (skin removed)

Method

Step 1

Preheat oven to 180°C -

Step 2

Combine soy sauce, honey, lemon juice and garlic in a bowl and mix well -

Step 3

Place the chicken drumsticks in an ovenproof dish in a single layer and pour the sauce over them  -

Step 4

Cover with foil and cook for 45 minutes or until the chicken in cooked. Rotate the drumsticks every 10 minutes to get the most out of the marinade  -
