Thai green curry for kids

Don’t be scared off by the word ‘curry’ when cooking for kids.  Choosing milder, flavours can help them broaden the range of tastes and even foods they will enjoy.  Simply introduce small amounts in familiar ways to encourage acceptance. This recipe is a kid-friendly recipe using our mild green curry paste that introduces aromatic herbs and spices, encouraging acceptance of a wide range of flavours. You can also use the paste for our Thai Chicken Rissoles, a flavour packed toddler friendly recipe.

Ingredients

  • 2-3 tbsp thai green curry paste for kids (see link above)
  • 400ml coconut cream
  • 30g palm sugar
  • 1 tbsp fish sauce
  • 500g chicken breast or thigh fillets, chopped into bite sized pieces
  • 100g frozen peas
  • 100g green beans, chopped into 3 cm lengths
  • 1 x tin baby corn, cut in half
  • 20g fresh thai or regular basil leaves

Method

Step 1

Place the curry paste and ½ cup of the coconut cream in a wok or large frying pan over medium-high heat. Add the palm sugar and fish sauce and cook for a further few minutes, adding a little more coconut cream if needed. -

Step 2

Add the chicken and remaining coconut cream, bring to the boil, then reduce the heat to a simmer and cook for 8-10 minutes until the chicken is tender. -

Step 3

Add the peas, green beans and baby corn and cook for a further 2 minutes. Stir through the basil leaves and serve with steamed rice. -

    I love this recipe. It is so easy to make and the paste goes a long way, storing well in the freezer. My fiancé and 14mo love it too. So tasty.
