Creamed Corn

Creamed corn and cheese toasted sandwiches were a favourite of mine when I was young.  I can’t remember the last time I enjoyed one or the last time I bought a can of creamed corn.  And since I have been busy steaming and pureeing loads of vegetables for George I decided I would try my own version of creamed corn for him to try.  It contains no sugar, no salt, no additives. Just corn.  And so much sweeter and tastier.  I might have to try it on that toasted sandwich that was such a favourite of mine.

Nutrition Note:  Corn kernels are very high in fibre and a great way to add introduce texture to your baby’s food.

Ingredients

  • 2 cobs of corn
  • 60 ml water

Method

Step 1

Cut the corn kernels off the cob and steam until tender. -

Step 2

Puree corn with 60ml water until you reach desired consistency. -

Step 3

Mix with other pureed vegetables to serve to your baby or use in recipes calling for creamed corn. -

Step 4

Optional: Pass creamed corn through a sieve if you need a smooth consistency puree to offer to your baby. -

      Hi Charlotte, yes I have frozen this successfully. I simply froze it in little ice cube trays for individual portions. Enjoy, Jx
