Budget Meals: Beef and Noodle Stir-Fry 

Youve got to love the taste of Thai takeaway without the additives and layer of grease. This beef and noodle stir-fry is a simple and quick recipe using accessible Asian ingredients. The soft rice noodles are sure to be a hit with the kids and you can pack as many veggies into this meal as you wish. You can halve/quarter this recipe easily if just making for the kids, remember to reduce the sauce quantity for young children. 

Nutrition note: Asian sauces are often high in salt so look for reduced salt varieties where possible, especially in meals for babies, toddlers and young children.

Ingredients

  • 2 tbsp peanut or rice bran oil
  • 300g stir-fry beef strips
  • ½ tsp crushed garlic
  • 3 tsp finely chopped shallots, white part only (chop and reserve green part to garnish)
  • 3 tbsp reduced salt soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar or maple syrup
  • 1kg pack fresh flat rice noodles
  • 2 eggs, whisked
  • 1 bunch broccolini, chopped
  • 1 cup chopped frozen or fresh vegetables eg carrot, celery, baby corn
  • pinch of white pepper
  • ¼ lemon, to season

Method

Step 1

Heat the oil in a large saucepan or wok over high heat. -

Step 2

Add the beef strips and brown all over. Remove from the pan and set aside. -

Step 3

Reduce the heat to medium. Add the garlic and shallots to the pan and sauté for a few minutes. -

Step 4

Add the soy sauce, oyster sauce and sugar, stirring constantly for 3 minutes or until the sauce begins to bubble and thicken. -

Step 5

Add the noodles, tossing them in the sauce until separated and well coated in the sauce. -

Step 6

Move the mixture to the sides of the pan. Pour the egg in the middle and cook for a few minutes or until scrambled. -

Step 7

Add the broccolini, vegetables, cooked beef and pepper. Stir-fry for around 5 minutes or until all ingredients are tender and well combined. -

Step 8

Serve with lemon and shallots – adults may like to drizzle over some extra soy sauce. -
