Have you had that moment, where you need to eat some sort of dessert in front of your toddler. It’s a sad day that goes something like this; you shut your eyes going mm mmm savouring the moment happily, toddler walks in and see’s this, looks up at you with big eyes saying “ta, ta?” You think, “Oh a little won’t hurt?” You then spend the next hour or more chasing after a crazed toddler high on sugar, who now only wants to eat delicious desserts, and you will never eat in peace again.
Well, there is another option for a healthier dessert treat for the whole family.You can have this so many ways, so I have pick ‘n’ mixed it.
Pick ‘n’ mix ideas (other flavours to mix and match)
› Vanilla custard
› Low sugar jelly
› Stewed rhubarb
› Blueberries
› 2 tbs maple syrup
› Chopped pancakes pieces
Ingredients
- 1 apple, peeled, cored, diced
- 4 apricots, cored, diced
- ¼ cup water
- ½ cup oats
- 3 tbs honey
- 1 tsp cinnamon
- 3 tbs raisins
- 1 tbs butter (optional)
Method
Step 1
Preheat the oven to 180°C -
Step 2
Place water, apricot and apple in a medium saucepan. Bring to the boil, cover, lower heat and simmer for 5 minutes or until the fruit is soft. Set aside to cool. -
Step 3
Combine the oats, butter, honey, cinnamon, raisins in a bowl. (Tip: if the oat mix is too dry you can mix a bit of the stewed fruit in before baking.) -
Step 4
Fork mash stewed fruits to combine. Divide stewed fruit mixture into small ramekins or oven proof dish. Sprinkle oat mixture on top. Place in the oven and cook for around 10 minutes or until the oats are slightly toasted. -
