Pick ‘n’ Mix Tray Baked Vegetables 

When the cooler weather hits and the cold salads become less appealing look to this super simple recipe to add colour, variety and nutrition to your family mealtimes. You can puree or mash the veg for the babies and they’re great as a first finger food too if you are baby-led weaning or simply combining spoon-fed meals with finger foods.

Fussy Eating Tip: When choosing your pick ‘n’ mix vegetables always include a few you know your child will enjoy along with any new or regularly refused vegetables. Let them decide what and how much to eat without bribes or rewards. This helps to reduce possible mealtime stress and anxiety and any new or previously refused foods are more likely to be enjoyed.

Ingredients

Method

Step 1

Preheat the oven to 190°C.

Step 2

Place all the vegetables on a large baking or roasting tray. -

Step 3

In a small bowl, mix together the olive oil, garlic and herbs. -

Step 4

Toss the vegetables in the oil and season with pepper. -

Step 5

Bake for 40 minutes or until the vegetables are cooked and golden at the edges. -

Step 6

Serve as side on your child’s tasting plate, as a side with your favourite roast, as a mash or puree for your baby, blended with some chickpeas and/or tahini for a delicious dip or on sandwiches. -

Step 7

Storage: leftover roast vegetables can be stored in the fridge for 2-3 days. -
