Frozen Pineapple & Coconut Sticks
Frozen fruit is a wonderful, refreshing snack for the kids during Summer. It’s super easy to prepare and they think it’s a treat. It’s a win win. A tasty nutritious win.
Nutrition Note: Pineapple, sweet and refreshing, is packed full of immune-boosting vitamin C, B group vitamins, and is high in fibre.

Ingredients
- 1 fresh pineapple
- 1/2 cup 100% fruit juice
- 1/2 cup dried shredded coconut
Method
Step 1
Cut the pineapple (around the core) into 6 spears. Thread each spear onto a wooden skewer or paddle pop stick. -
Step 2
Pour the juice and coconut into separate shallow bowls. -
Step 3
Roll each skewer into the juice and then into the coconut. Arrange on a tray lined with baking paper. Carefully cover the trya with plastic wrap and freeze for around 2 hours. -
