Have you heard of teff? It’s the latest ancient grain to hit the scene and for it’s teeny tiny size it sure packs a nutritious punch – especially for kids. {You can read more about all the good stuff teff has to offer on our website, plus how to cook it, how to use it, where to buy it.} It’s very versatile in your everyday cooking and teff is often used in place of quinoa or rice. We were quick to put teff to the test in one of our favourite recipes using quinoa – our Chicken, Halloumi and Quinoa Balls.
Verdict: Light, flavourful, and deee-licious! Sure to be a favourite with your kids.

Ingredients
- 1 red onion, diced
- 100g haloumi (choose the lowest in salt)
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 500g chicken breast or mince
- 1 tbsp chopped parsley
- 3/4 cooked teff grain
- 1/4 cup multigrain breadcrumbs (or quinoa flakes)
- 1 egg
- 1 tbsp olive oil
Method
Step 1
In a food processor combine the onion, halloumi, lemon zest and juice - process until finely chopped. Then add the chicken and sage and process until well combined. -
Step 2
Remove the processed mixture and place into a bowl. Stir through the cooked teff, breadcrumbs and egg. -
Step 3
Roll the mixture into small tablespoon sized nuggets. (You can flash freeze these raw at this point)

Step 4
Heat the olive oil in a frypan over medium heat. Add the meatballs in batches and continue turning until all sides are golden brown and the chicken is cooked through.
