Caramelised Onion, Potato and Three Cheese Pizza

The name sounds pretty fancy, but the reality is this is a very simple and delicious pizza. I say pizza, but to make it even easier (and Harry appropriate) I simply used a round of wholemeal pita bread as the base. I knew it was worth blogging when Harry pointed his little finger towards the kitchen and demanded “Moooooore”.

Ingredients
- 1 tsp extra virgin olive oil
- 1/2 brown onion, finely chopped
- 1/2 tsp balsamic vinegar
- 1/2 tsp pure maple syrup
- 1 pinch of dried thyme
- 1 small potato, very finely sliced (paper thin)
- 1/4 cup grated cheddar cheese
- 2 tbsp ricotta cheese
- 1/4 cup grated parmesan cheese
- 1 pizza base or wholemeal pita round wrap
Method
Step 1
Preheat the oven to 180°C and line a pizza tray with baking paper. Heat the oil in a small fry pan over medium. Add the onions and sauté for a few minutes or until softening. -
Step 2
Add the balsamic vinegar and maple syrup. Mix to combine. Lower the heat, sprinkle over the thyme and leave for around 5 minutes to caramelise. -
Step 3
To prepare the pizza, sprinkle the cheddar cheese over the base. Next spread the caramelised onion over the top. Place the potato slices evenly around the pizza. Dollop the ricotta cheese and finally sprinkle the parmesan over the top. -
Step 4
Place in the oven and bake for around 10 minutes or until the base is crisp and the potato is cooked. -
