Ingredients
- Pastry
- 225g butter, cubed
- 2 cups plain flour
- 2 tsp caster sugar
- 1/2 cup sour cream
- Filling
- 6-8 pink lady or granny smith apples, peeled and sliced
- 2 tbsp lemon juice
- 1-2 tbsp butter
- 1/2 tsp ground cinnamon
- 2 tsp maple syrup
- Crumble Topping
- 60g butter, cubed
- 1 cup oats
- 1/2 cup flour
- 2 tbsp brown sugar
- 1/2 tsp ground cinnamon
Method
Step 1
Preheat the oven to 180°C and grease and line 4 x ¾ cup capacity pie dishes. -
Step 2
To make the pastry place the butter, flour and sugar in the bowl of a food processor and pulse until the mixture resembles breadcrumbs. Add the sour cream and process until just combined. Bring the dough together with your hands, wrap in cling film and place in the fridge to chill for 20 minutes. While the pastry is in the fridge continue on with preparing the apple and crumble mix. -
Step 3
To make the filling place the apple slices, lemon juice, butter and cinnamon in a saucepan over medium heat, cover with a tight fitting lid and cook, stirring occasionally, for 10 minutes or until apple slices are tender. Stir through the maple syrup and set aside. -
Step 4
To make the crumble combine the butter, oats, flour, brown sugar and cinnamon in a large bowl and rub the butter into the other ingredients until the mixture resembles fine breadcrumbs. -
Step 5
To assemble the pies remove the pastry from the fridge and roll out on a lightly floured surface to 3mm thick. Cut the pastry to size and layer on the base of your pie dishes. Distribute the apple mixture evenly between the pies and top with the crumble mixture. -
Step 6
Place the pies in the oven and bake for 25-30 minutes or until golden. -
Step 7
Serve on its own or with greek or vanilla yoghurt or custard. -
Step 8
Storage: store leftover cooked pies in the fridge for up to 2 days. Prepared uncooked pies can be frozen for up to 2-3 months before baking. -

Just wondering if there is a dairy free alternative to replace the sour cream? Could I use a natural coconut yoghurt instead?
