Pick ‘N’ Mix fruit crumble

Our fruit crumble is a low maintenance ‘dessert’ that is naturally sweet and delicious. Why should the adults have all the fun?

- 1 apple, peeled, cored, diced
- 4 apricots, cored, diced
- ¼ cup water
- ½ cup oats
- 3 tablespoon honey
- 1 tsp cinnamon
- 3 tbsp raisins
- 1 tbsp butter (optional)
- Pick ‘n’ mix ideas (other ingredients to try)
- Stewed rhubarb
- Stewed pear
- Blueberries
- 2 tbsp maple syrup
- Chopped pancakes pieces
- Bread soaked in custard
- Vanilla custard
Method
Step 1
Preheat the oven to 180°C. -
Step 2
Place water, apricot and apple in a medium saucepan. Bring to the boil, cover, lower heat and simmer for 5 minutes or until the fruit is soft. Set aside to cool. -
Step 3
Combine the oats, butter, honey, cinnamon, and raisins in a bowl. Tip: if the oat mix is too dry you can mix a bit of the stewed fruit in before baking. -
Step 4
Fork mash stewed fruits to combine. Divide stewed fruit mixture into small ramekins or ovenproof dishes. Sprinkle oat mixture on top. Place in the oven and cook for around 10 minutes or until the oats are slightly toasted. -
