Quinoa, Chia & Blueberry Porridge

A heart and belly warming breakfast to start the day. It’s perfect for the weekends or slower starts to the morning, or simply prepare most of the recipe the night before and reheat the next day for a delicious and nutritious breakfast in minutes. Another favourite to add to our homemade cereal collection.
Nutrition Note: A gluten free porridge that is high in protein, nutrient rich and provides long lasting energy for the busy school or work day ahead.

- 300ml milk
- 3/4 cup white quinoa seeds, rinsed well
- 1 tbsp chia seeds
- ½ tsp pure maple syrup, plus extra to serve
- pinch ground cinnamon
- pinch of salt
- ½ cup fresh or frozen blueberries (thaw frozen berries before using)
- 1 banana, chopped
- natural or greek yoghurt to serve
Method
Step 1
Place the milk in a small saucepan and bring to a gentle boil. Add the quinoa and chia seeds and return to the boil. Reduce the heat, cover and simmer for 12 minutes. -
Step 2
Add the maple syrup, cinnamon and salt and cook for a further 8-10 minutes or until almost all the milk has been absorbed. -
Step 3
Add the blueberries and cook for a further minute. -
Step 4
Transfer to bowls, top with extra milk and a little maple syrup if required and serve with the chopped banana and natural or greek yoghurt. -
Step 5
Time saving tip: prepare the porridge up to step 4 the night before, transfer to bowls and store in the fridge. In the morning, add a little extra milk and reheat in the microwave for a speedy breakfast. -
