Chicken and Bacon Quinoa Dinner (or couscous)

You know those days when you have been out frolicking in the sunshine with your gorgeous toddler and you walk in the door at 5pm and everything goes a bit pear-shaped? Toddler turns hungry/feral, you have nothing prepared, you’re tired, they’re tired, everyone’s tired. Well this is that sort of meal, simple, delicious, nutritious and most importantly > quick.

Nutrition Note:  Quinoa, an ancient grain, is high in carbohydrates, protein, dietary fibre and has a low glycaemic index (GI).

Ingredients

  • 1/2 cup cooked quinoa grain (or couscous)*
  • 1 tbsp extra virgin olive oil
  • 1/2 brown onion, finely chopped
  • 1 rasher bacon, trimmed, finely diced
  • 1 chicken breast, finely diced
  • 1/4 cup salt reduced vegetable stock
  • 1 carrot, finely chopped or grated
  • 1/4 cup frozen peas
  • Kernels from 1 cob of corn
  • 1/4 cup grated cheese
  • *Cook the quinoa according to pack instructions. Check packet to ensure quinoa is gluten free if required.

Method

Step 1

Heat the oil in a fry pan over medium heat. Add the onion and sauté for a few minutes. -

Step 2

Add the bacon and chicken, cooked until brown and almost cooked through. -

Step 3

Add the stock, carrot, peas and corn. Simmer for a few minutes until the vegetables are tender and the chicken is cooked through. -

Step 4

Add the cooked quinoa and cheese, toss to combine and remove from the heat. -

    Hahaha! Just made this one, and my 1yr old loved it, as usual. Hubby was feeding it to her and kept taking sneaky spoonfuls for himself. I had already portioned out the remains and put them into the freezer, and Hubby was complaining that I was keeping all the ‘best’ food away from him. Will make a big batch for all next time! Thanks for another great and easy recipe.

    Hi 🙂 I’m just about to make this for dinner tonight. I was wondering if you think it would work with pasta or rice? We have no quinoa in the house and Harry often turns up his nose to cous cous…? Is brown rice ok to freeze? I get worried about brown rice, might just stick to white rice or pasta if you think it would go? Thank you!

      Hi Alex, yep you can use whatever you like really, risoni, pasta, rice, quinoa, couscous – the choice is yours. Rice is OK to freeze, or you can freeze the mixture as is and then stir through the rice when reheating. Hope your little one enjoys. Ax
