Budget Meals: Tuna potato jackets for kids

Ingredients

  • 4 desire potatoes (200g each)
  • 1 tbsp olive oil
  • 1 x 185g tin of tuna in springwater, drained
  • ½ red onion, finely chopped
  • juice of 1 lime
  • 6 tbsp Greek yoghurt
  • handful chopped coriander or parsley leaves (to garnish)
  • feta cheese, to garnish (optional)

Method

Step 1

Preheat the oven to 180°C. Scrub the potatoes, rub with olive oil and prick all over with a fork. Place on a baking tray lined with baking paper. Cook for around 40 – 60 minutes or until cooked through (you can insert a skewer to check the inside is tender).
Alternative cooking method: place the potato on a microwavable plate and cook on high for 18-20 minutes or until tender. Cut the potato in half, gently mash the insides slightly and place on a plate -

Step 2

In a small bowl combine the tuna, onion, lime juice and yoghurt. Spoon the tuna mixture ever the mashes middle of the potatoes. Scatter over the herbs and feta if using -

Step 3

Storage: these potato jackets are best served fresh. You can wrap the cooked potato in foil and store in the fridge for 24 hours -

    What dairy alternative would you suggest in replacement of the yoghurt? I tend to us whole egg mayo, in your opinion do you think whole egg mayo is at least a bit better than normal mayo due to no sugar content in the whole egg? I much prefer the taste of it anyway
