Pick ‘n’ Mix Toasted Muesli

I have told you how much I love muesli haven’t I? And a recent post on our Facebook page revealed a lot of our one handed cook toddlers love it too.  I usually go for natural muesli.  Toasted muesli and granola seems a bit extravagant for a daily breakfast with many of the commercial varieties loaded with added sugars and fats. But I’ve given a homemade version a go for a healthier (and we think tastier) option.

Harry enjoyed it eating it dry, picking up all crunchy oats and nuts off his highchair tray, we enjoyed it with milk and yoghurt.  How will you enjoy yours?

Ingredients

  • 3 cups oats
  • 1 cup nuts chopped (we used macadamias and flaked almonds)
  • ½ cup seeds (we used sunflower, linseed and sesame seeds)
  • ¼ cup desiccated coconut
  • ½ tsp cinnamon
  • 2 tbsp macadamia oil (alternative: sunflower, canola, vegetable)
  • 3 tbsp honey
  • 125ml apple juice
  • 1 cup dried fruit (we used sultanas)
  • Pick 'n' Mix - use your families favourites
  • Nuts – e.g pecans, almonds, walnuts, hazlenuts, macadamias
  • Seeds – e.g. linseeds, sunflower, chia, sesame, pepitas
  • Dried fruit – e.g. sultanas, chopped apricots or apple, dates, raisins, sultanas, cranberries, dried cherries or blueberries
  • Note: choose age appropriate fruit and nuts for your child. Whole nuts pose a choking risk.

Method

Step 1

Heat oven to 170°C. -

Step 2

Combine oats, nuts, seeds, coconut in a large bowl. Stir through oil, honey and apple juice. Spread evenly over a large baking tray. -

Step 3

Bake for 10 minutes, remove and stir. -

Step 4

Bake for a further 20-30 minutes stirring every 10 minutes until golden. -

Step 5

Remove from the oven, stir through the sultanas and leave to cool. Store muesli in an airtight container. -

Step 6

Serve with milk and/or yoghurt and fresh fruit. -

    Oh dear, this stuff is so morish that I haven’t stopped munching on it since I made it 2 days ago! My 15mth old loves it with Greek yoghurt or just plain as a snack.
