Date & Coconut Slice

This date and coconut slice has no added sugar and uses a mix of quinoa and wholemeal flours. Quinoa has some wonderful nutritional benefits which you can read more about here.

Nutrition Note:  There is no need for added sugar in this slice.  The dates and apple puree add all the delicious sweetness it needs.

Ingredients

  • 1 cup pitted dates
  • ½ cup boiling water
  • 1 tsp lemon juice
  • ½ cup wholemeal plain flour
  • ½ cup quinoa flour (or wholemeal plain flour)
  • 1 cup rolled oats
  • ¼ cup quinoa flakes (or rolled oats)
  • 30g unsalted butter, chopped
  • ½ cup apple puree or apple sauce
  • 1/4 cup desiccated coconut

Method

Step 1

Preheat the oven to 190°C. Grease a 23cm square baking dish or line with baking paper. -

Step 2

In a small saucepan over medium heat, combine the dates and boiling water. Stir until the water has been absorbed and the dates are smooth. Remove from the heat and stir through the lemon juice and apple puree. Set aside. -

Step 3

Place the oats, quinoa flakes, flour, coconut and butter in a small bowl and mix well to combine. Add to the date mixture and stir until just combined. -

Step 4

Place mixture into the baking tray, pressing down firmly. Bake for around 25 minutes, remove from the oven and leave in the pan to cool. Slice, and keep in the refrigerator or freeze in small portions for up to two months. -

      Hi Liz, you could try using quinoa flakes – it won’t give the same texture but it will be gluten free 🙂 Jx

    By my calculations, this slice works out to have just under 2000 calories! How many portions is it supposed to provide? I was so looking forward to this but am put off now by the high calories because it may be healthy but I’m trying to lose weight. Thanks

    Just trying this out for the first time. Could other types of dried fruit be used? Or a mixture of dried fruits?

      Hi Sara, you could try other fruits but the reason I use dates is the heating of them creates a really smooth paste that I am not sure you would get from other fruits. But def give it a go and see! Let us know how you get on 🙂 Ax

    My 18 month old loved this! Replaced the butter with coconut oil, added in a grated zucchini & added in a bit of extra flour to make up for the moisture in the zucchini!

      Could everyone please go onto a Health Dept. website & check out the properties everything coconut. The water is fine but heart disease has risen drastically in the parts of Asia that have become affluent enough to afford meat on a regular basis & cook it using coconut milk/cream.

    Where you have

    ½ cup wholemeal plain flour

    If I don’t want to use quinoa flour.. Do I put 1 cup of wholemeal plain flour?

    These were devoured by my 11 month old and my toddler. Used 1 cup whole meal plain flour and it turned out well, sweet enough with no added sugar. Big thumbs up!

      Yes you can add chia seeds. Either sprinkle through or soak 1 tbsp in 3 tbsp of water to form a gel. Great binder and an alternative to egg. Ax

    Hi there
    I made this yesterday and it was yum. I added in some seeds also. I was wondering is it suppose to be crunchy or soft as mine was soft and I was wondering if perhaps I didn’t cook it long enough although it was golden on top and browned underneath?

      Perhaps try lowering the heat and cooking for slightly longer? Sometimes cooking without all the traditional baking elements butter, sugar etc the mix can be more temperamental and requires some guesswork as we all have different ovens! I am glad you enjoyed it though 🙂 Ax

    These are fantastic my 20 month old loved them .I froze half and they defrosted perfectly, I cut them up in bite size cubes and put them in sandwich bags so there ready to go straight into lunchbox.
    Also my husband liked them so I drizzled some dark chocolate on some for him !!

    I have not yet been compelled to comment on a recipe, but this is excellent. It lasts forever, holds together and tastes great. I used mashed banana instead of apple puree, and liked the banana flavour but intend to try it with apple, too. Thanks!

    Thanks for this receipe. Ideal for the lunchbox. Love the ‘no added sugar’, even though I put a scraping of icing on the top! I rubbed the butter in with my finger tips & it’s fine. I also just used oats throughout ‘cos I didn’t have quinoa flakes. Next time I throw in a handful of dried cranberries for a bit of zing.
