Cheesy Quinoa Puffs

I had one cup of leftover cooked quinoa and thought I would do a little experimenting. These are very cheesy and moreish, Harry gobbled three of them straight out of the oven, so I’d say a winner. Perfect for a snack on the run or as something tasty in lunch boxes.

They are best eaten fresh but will keep for a day or two and can be frozen separately.

Ingredients

  • 1 cup cooked quinoa (I used three grain)*
  • ½ cup grated cheese
  • ¼ cup frozen peas
  • ¼ cup fresh corn kernels
  • 1 egg, whisked
  • 2 tbsp melted organic butter (optional)
  • *Note: cook according to your packet instructions as it does vary

Method

Step 1

Preheat the oven to 180°C. Line a baking tray with baking paper. -

Step 2

Combine all ingredients in a bowl and mix well. -

Step 3

Dollop tablespoon sized balls of mixture on the tray. Brush with butter. Place in the oven for around 30 minutes or until golden brown. -

    I made these for my 10 month old and none of us liked them, sorry 🙁 They were bland straight out of the oven, and the next day, the quinoa had turned bitter-tasting. I had made a batch to freeze, but they ended up in the bin. There are better recipes on here.

      Quinoa is bitter if you don’t rinse it well in cold water before you use it. that might be the problem?

    I made these for my 14 month old and she loved them. If anyone had the bitterness issues like the previous commenter then you probably need to rinse the quinoa better.

    My 18 month old loves these, I add a bit more cheese, and grate carrot or zucchini instead of peas as I don’t like them. An easy snack for everyone.

    We just had these tonight. I was really skeptical as the mix didn’t hold together on the tray. But they came out of the oven really well (baked for closer to 40 mins but my oven might be a little off) and my 11 month old gobbled them up. Most surprising, my husband liked them too.

    I’ll make again with an eye toward bringing out the faintly southwestern taste from the corn by adding red capsicum, cumin, and cilantro. Should go really well with guacamole.

    Yum! We cheated and defrosted the peas and corn then cooked these in the frypan on low. So simple and moreish! Will experiment with other herbs and spices now that Mr 9MO is getting into it

    Success! My 14month old loved them. I halved all the ingredients (except the egg!) in case he didn’t like it & thought the mix might be too runny but they came out perfect. I love the simple flavour. Would love to hear from others who have added other ingredients.

    Since there are more positive than negative comments, I’m going to give these a try. Always up for new and different snacks for the toddler (plus mum and dad). Just wondering if they freeze ok and if so, is reheating in the microwave ok??

    These were delicious. I wanted to freeze some but they are all gone.

    these are delicious! made these as per the recipe but also added a tablespoon of thermomix veggie stock paste to add a bit of flavour and i think this is what made them so tasty. will def be making these regularly thanks!

    These were great, I was a bit skeptical about whether or not they would hold together as they were quite loose before I baked them but they came out perfectly. You could so easily change the vegie ingredients around to what you had on hand and also add any herbs and spices to your liking to boost the flavour. Thanks for the recipe!

    I was also very skeptical that they wouldn’t stick together as they didn’t when I put them on the tray. Very pleasantly surprised and very yummy.

    My 8 month old is so fussy but I thought I’d give these a go and they went down well. I amended the recipe a bit by not having the corn kernels and instead half a cup of grated parsnip and courgette. What I like is there are so many other recipes on here so you can pick and choose what works for your little one. Thanks!

    Just so everyone knows DO NOT USE BAKING PAPER!
    They stick to the bottom and ruined half the batch
    Also I flattened them out which was another mistake as the went very think and a bit too crispy
