Cauliflower Popcorn Bites

Cauliflower Popcorn Bites don’t really taste like popcorn, but they do look a little like it and they are moreish and yummy. So, that’s good enough, I think. The weather in Sydney has been non-stop rain for a week. We are all well and truly over it but one positive is that I like to experiment in the kitchen, and, Harry just loves to “help”. We came up with these little popcorn-looking bites when I was craving popcorn and knew I wouldn’t be able to get away with eating it in front of Harry.

My sister and Mum made a batch too, and both loved it.

Nutrition note:  The humble cauliflower contains many important naturally occurring plant chemicals (phytochemicals) that work to protect the body from damage and disease. There’s nothing like a bit of spice to add flavour and fun to this everyday veg.

Ingredients

  • 1 head of cauliflower (around 2 cups)
  • 1 tbsp extra virgin olive oil (or any cooking oil)
  • 1/2 tsp smoked or sweet paprika
  • 1/2 tsp turmeric
  • Pinch of cinnamon (optional for sweetness)
  • Pinch of salt and pepper (optional depending on age)

Method

Step 1

Preheat the oven to 180-200°C (depending on your oven strength). Prepare a large oven tray by lining with baking paper. -

Step 2

Break the cauliflower into small popcorn sized pieces. -

Step 3

Toss the cauliflower in oil and spices. -

Step 4

Spread the cauliflower evenly over the baking tray. Bake for around 20 minutes, then toss, and bake for a further 15 or until golden brown and crispy. -

    I just made these. I’d like to point out that one head of cauliflower makes a LOT more than 2 cups. Also, I set my oven at 400 degrees F and they took a lot more time to become crispy. As a matter of fact, they’ve been in my oven for 45 minutes so far and they’re not crispy yet. But I took a quick taste and they’re very good! So this recipe is a keeper, with a couple changes.

    I don’t cook over 225F degrees that way it doesn’t kill all the live enzymes

    I love most of your recipes however I found these cauliflower bits didn’t go crunchy or crispy, only burnt on the edges and pretty floppy, not sure how to get them crispy?

      Hi Abi, could you chop them smaller and lower the heat but cook for longer? Also patting them with a paper towel before adding the oil and spices might help. Ax
