Carrot, Tomato and Cheese Pasta

This here is a long time Harry favourite. I recently tested this recipe on a friends fussy toddler, and we were thrilled to see her hoover it up and literally lick the bowl clean. Truly versatile and so simple, this will be one of those recipes you will use time and time again.

This is the basic version, I often add other veggies such as zucchini, peas, corn and mushrooms, or poached chicken, depending on what I have in the fridge.

Nutrition Note:  Carbohydrate rich foods, such as pasta, are not only source of energy but they help promote sleep making this a great meal choice for your toddlers.

Ingredients

  • 1 tsp extra virgin olive oil
  • 1/2 small brown onion, finely chopped
  • 1/2 cup chopped tomato
  • 1/2 carrot, grated
  • 1 tbsp cream (optional)
  • 1/4 cup grated cheese
  • 1 cup dried pasta spirals

Method

Step 1

Bring a saucepan of water to the boil. Cook the pasta to your liking and set aside. -

Step 2

Heat the oil in a small fry pan over medium. Add the onions and cook for a few minutes, or until soft. -

Step 3

Add the tomato, and carrot (and any other veggies) and sauté, stirring occasionally for around 5 minutes. -

Step 4

Add the cream and cheese. Stir until melted and then pour in the pasta. Toss to coat and serve. -

Step 5

Tip: I usually keep the second serve in the fridge for the following nights dinner. -

    I have a fussy eater and I prepared it and she had about 5 noodles and that’s all she wanted but she was still hungry. She still rather have baby jar food stage 1… trying so hard to get her converted and she’s already a year old. Oh and she doesn’t care for milk products either so that could be why too. Still trying to get her daily milk needs in. But I enjoyed the taste of it was hoping it’d be the same for her. Will try it on her again tomorrow hopefully better luck.
