And, what I also love is how cheap it is to make a batch of pies and have leftovers for the freezer. It was a vegetarian day today (we try to go veggie twice a week) but to be honest I don’t think either of the boys realized there was no meat in them. You could also add other ingredients, like sausages, mushrooms, or hide other veggies.

Nutrition Note: Red kidney beans are low GI and high in protein making them perfect for satisfying hungry little appetites.

<h3 class="blue">Ingredients</h3><ul><li class="ingredient">1 tbsp olive oil</li><li class="ingredient">1 red onion, finely chopped </li><li class="ingredient">3 tomatoes, diced (or 1 tin of diced tomatoes) </li><li class="ingredient">2 x tin red kidney beans, drained and rinsed </li><li class="ingredient">2 tbsp tomato paste (no-added salt)</li><li class="ingredient">1 cup water (or vegetable stock) </li><li class="ingredient">3 sheets puff pastry </li><li class="ingredient">Note: you can also add sliced sausages and other veggies </li></ul><h3 class="blue">Method</h3><h4 class="red">Step 1</h4><p class="instructions">Preheat the oven to 180°C.</p><h4 class="red">Step 2</h4><p class="instructions">Heat the oil in a saucepan over medium. Add the onions and sauté until soft. Add the tomatoes and leave to simmer for a few minutes, stirring occasionally. </p><h4 class="red">Step 3</h4><p class="instructions">Add the kidney beans and tomato paste and stir to coat. Add the water. Bring to the boil, cover, and lower heat to a simmer for around 10 minutes. Remove from the heat to cool. </p><h4 class="red">Step 4</h4><p class="instructions">In the meantime, grease 6 ramekins or a 6 hole extra-large muffin tin. Cut the pastry to size and line each tin. Also, cut 6 pie lids.</p><h4 class="red">Step 5</h4><p class="instructions">Spoon the bean mixture into the pastry. Cover with the pastry lids and press around the sides to seal. OHC's made two soups, <a title="Food Revolution Day Soup: Pearl Barley, Vegetable &amp; Basil" href="http://onehandedcooks.com.au/recipe/food-revolution-day-soup-pearl-barley-vegetable-basil/" target="_blank">a vegetable, barley and basil</a>, and a <a title="Food Revolution Day: Creamy Pumpkin and Cashew Nut Soup" href="http://onehandedcooks.com.au/recipe/food-revolution-day-creamy-pumpkin-and-cashew-nut-soup/" target="_blank">pumpkin cashew and leek</a>, both were delicious and used simple <a title="5 Reasons for ‘In Season’" href="http://onehandedcooks.com.au/5-reasons-for-in-season/" target="_blank">seasonal ingredients</a>.

A great addition to any soup is a little bit of "crunch", and these are an alternative to a crouton, and just a bit delicious, so I thought I might share.

<h3 class="blue">Ingredients</h3><ul><li class="ingredient">1 parsnip</li><li class="ingredient">1 cup cooking/frying oil </li><li class="ingredient">Sweet Paprika </li></ul><h3 class="blue">Method</h3><h4 class="red">Step 1</h4><p class="instructions">Peel the parsnip. </p><h4 class="red">Step 2</h4><p class="instructions">Use a veggie peeler to peel long thin strips. </p><h4 class="red">Step 3</h4><p class="instructions">Heat oil in a small frypan (to around 185°C) Add parsnip strips to the oil in small handfuls (be careful not to crowd), until golden brown and crisp. </p><h4 class="red">Step 4</h4><p class="instructions">Transfer chips to paper towels to drain, and sprinkle with a pinch of salt and sweet paprika. </p>

It contained the most beautiful looking pumpkin, which quite literally hurled itself at me when the delivery guy fell up the stairs. So I went with it and created this creamy, pumpkin and cashew nut soup.

The toasted cashews add a little something- something, and the <a title="Parsnip Chips with Paprika Salt" href="http://onehandedcooks.com.au/recipe/parsnip-chips-with-paprika/" target="_blank">fried parsnip chips</a> are positively to die for, I ate the first batch all on my own. If you have a nut allergy, you really don't need the nuts, just add the cream, and if you're vegan, then lose the cream and up the nuts. The soup is actually really good. If I do say so myself. Harry used the parsnip chips to dip in the soup, and he was a very happy almost-two-year-old.

Remember to choose appropriate textures when serving <a title="Babies Go Nuts" href="http://onehandedcooks.com.au/babies-go-nuts/" target="_blank">nuts</a> to your child.

<h3 class="blue">Ingredients</h3><ul><li class="ingredient">1 tbsp olive oil </li><li class="ingredient">1 butternut pumpkin, quartered (skin on) </li><li class="ingredient">1 tbsp organic butter </li><li class="ingredient">1 leek, finely sliced </li><li class="ingredient">1 clove garlic, finely sliced </li><li class="ingredient">1 tsp crushed ginger </li><li class="ingredient">1/2 cup whole cashew nuts (divide in half)</li><li class="ingredient">1 apple, peeled, cored, diced </li><li class="ingredient">1 tbsp chia seeds </li><li class="ingredient">2 cups no added salt vegetable stock (or water) </li><li class="ingredient">1/4 cup of pouring cream (optional) </li><li class="ingredient">(Parsnip Chips)</li><li class="ingredient">1 parsnip, peeled </li><li class="ingredient">1 cup frying oil </li><li class="ingredient">1 pinch sweet paprika </li></ul><h3 class="blue">Method</h3><h4 class="red">Step 1</h4><p class="instructions">Preheat the oven to 180°C. Place your cut pumpkin pieces in a baking dish, pour over the oil and toss to coat. Roast for around 20 - 30 minutes or until flesh is soft. Scoop flesh out of the skin and set aside. </p><h4 class="red">Step 2</h4><p class="instructions">Heat butter in a fry pan over medium-low. Sauté the leek, garlic and ginger for around 6 minutes or until soft and fragrant. </p><h4 class="red">Step 3</h4><p class="instructions">Add 1/4 cup of whole cashews, roasted pumpkin and apple, stir to combine. Add the chia seeds and stock. Bring to the boil, cover, lower the heat and simmer for around 15-20 minutes. </p><h4 class="red">Step 4</h4><p class="instructions">Remove the mixture from the heat. Place in a food processor and process until smooth. Stir through the cream (optional).</p><h4 class="red">Step 5</h4><p class="instructions">Top this soup with toasted cashew crumbs, fresh chives and parsnip crisps (see below). *Remember to choose appropriate textures when serving nuts to your child - avoid whole nuts.</p><h4 class="red">Step 6</h4><p class="instructions">(Toasted Cashews) Heat a small frypan over medium. Add the cashews and toss for a few minutes or until golden. Remove from the pan and crush. </p><h4 class="red">Step 7</h4><p class="instructions">(Parsnip chips) To make the parsnip chips, peel the parsnips. Use a peeler to peel long thin strips. Heat oil in a small frypan (to around 185°C) Add parsnip strips to the oil in small handfuls (be careful not to crowd), until golden brown and crisp. Transfer chips to paper towels to drain, and sprinkle with a pinch of salt and sweet paprika. </p>

				<content:encoded><![CDATA[<p><img width="250" height="212" src="http://onehandedcooks.com.au/hg/wp-content/uploads/2013/05/IMG_0009-v2-250x212.jpg" class="attachment-recipe-listing wp-post-image" alt="IMG_0009 v2" /></p>I was so excited to receive my <a href="www.aussiefarmers.com.au" target="_blank">Aussie Farmers Direct</a> <a href="www.foodrevolutionday.com" target="_blank">Food Revolution Day</a> Box filled with fresh, local and <a href="http://onehandedcooks.com.au/5-reasons-for-in-season/" target="_blank">seasonal fruit and veggies</a>.  I was even more excited to see that it contained most of the ingredients needed to cook the soup I had in mind.  This pearl barley, vegetable and basil soup has fast become a favourite in this house.  It is actually inspired by Aussie chef, Tobie Puttock - a great mate of Jamie Oliver.  Quite appropriate I thought given we are participating in the Blogger Soup Challenge for Jamie's Food Revolution Day 2013.

This soup is wholesome, it's hearty, totally delicious and it fits the brief perfectly.  Cooked from scratch, it uses fresh local produce, simple ingredients and cooking techniques.  A delicious family meal that can be modified to suit even little bubs - just puree until you have the desired texture or just combine a few of these ingredients separately to make a simple puree.  George happily played food critic for me last night enjoying a few mouthfuls of soup with his dinner.

So I've Cooked It.  I plan to Share It with family. And I Live It - this is genuinely my style of cooking.  I hope you can do the same.

<h3 class="blue">Ingredients</h3><ul><li class="ingredient">1/2 cup pearl barley</li><li class="ingredient">3 tablespoons olive oil</li><li class="ingredient">1 red onion, diced</li><li class="ingredient">3 cloves garlic, finely sliced</li><li class="ingredient">1 leek, white part only, diced</li><li class="ingredient">3 sticks celery, diced</li><li class="ingredient">1 large carrot, diced</li><li class="ingredient">1 large zucchini, diced</li><li class="ingredient">1 large potato, peeled and diced</li><li class="ingredient">1 swede, peeled and diced</li><li class="ingredient">1 small bunch of basil, stalks finely sliced and leaves shredded and set aside</li><li class="ingredient">1.5 L homemade or reduced salt chicken stock</li><li class="ingredient">pepper to taste</li><li class="ingredient">grated parmesan to serve</li></ul><h3 class="blue">Method</h3><h4 class="red">Step 1</h4><p class="instructions">Place the pearl barley in a sieve and rinse under cold water, then set aside.</p><h4 class="red">Step 2</h4><p class="instructions">In a large saucepan, heat the olive oil over medium heat then add the onion, garlic, leek, celery, carrot, zucchini, potato, swede and basil stalks.  Gently saute for around 15 minutes without colouring the vegetables.</p><h4 class="red">Step 3</h4><p class="instructions">Add the stock and bring to a light simmer.  Stir in the barley, then cover the saucepan and simmer for an hour, stirring occasionally.  When the barely is soft stir in the basil leaves.  Cover and allow the soup to rest off the heat for around 15 minutes.  Season with pepper and serve with parmesan cheese.</p>

The Food Revolution is such a worthy cause. Why? Because it is helping to change the way we think about food - where it comes from and how we cook it. We are pretty passionate about this message too, and want to help the next generation grow up a healthy and happy bunch and to help drastically reduce the alarming obesity rate and diet-related diseases.

So, yes. We wanted to take part in the challenge and spread the word. Thank You, Jamie, for inviting us.

<span style="text-decoration: underline;"><strong>OUR CHALLENGE:</strong></span>

To create a lovely hearty soup using a box of veggies delivered from <a href="http://www.aussiefarmers.com.au" target="_blank">Aussie Farmers Direct</a>. Thankfully it is ridiculously cool here at the moment, ahh, soupy inspired perfection.

<strong><span style="text-decoration: underline;">YOUR CHALLENGE:</span></strong>

We would love for you to create a soup too. All you have to do is make a soup on Friday as part of the Food Revolution Day challenge, then send us your (original) recipe and pic and we will choose our favourite and feature it on our blog and Facebook page the following week. Then you will be famous. Sort of. And who knows, maybe Jamie O might see it?

Or, here are some of Jamie's ideas to get involved with:
<ul>
	<li>Get your friends and family around for a movie night and dinner. Make homemade pizza and popcorn.</li>
	<li>Get the kids excited about cooking by having a pancake- making session over the weekend.</li>
	<li>Host a potluck dinner and invite your friends to bring a secret ingredient of their choice, then get cooking.</li>
	<li>Show friends how to make their meals go further and save money in the process.</li>
	<li>Organise a dinner and cocktail party, themed around a specific country.</li>
	<li>Use Food Revolution Day as a starting point to having cooking sessions with your kids once a week or month.</li>
	<li>Start a blog with your friends and use it to swap recipes and foodie ideas.</li>
</ul>
